Apple Quinoa Salad with Walnuts and Orange Honey Vinaigrette

Ingredients
  

  • 1 cup Quinoa
  • 2 cups Water or vegetable broth
  • 2 medium Apples diced
  • 1/2 cup Walnuts roughly chopped
  • 1/4 cup Dried cranberries or raisins
  • 1/4 cup Fresh parsley or cilantro chopped
  • 1/4 cup Red onion finely chopped

For the Orange Honey Vinaigrette:

  • Juice of 2 oranges
  • Zest of 1 orange
  • 3 tbsp Olive oil extra virgin
  • 1 tbsp Honey
  • Sea salt and black pepper to taste

Instructions

  • Start by rinsing the quinoa under cold water. In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until the liquid is absorbed and the quinoa is cooked. Remove from the heat, fluff with a fork and let it cool.
  • In a large mixing bowl, combine the cooked and cooled quinoa, diced apples, walnuts, dried cranberries or raisins, chopped parsley or cilantro, and red onion. Set aside.
  • In a separate small mixing bowl, whisk together the orange juice, orange zest, olive oil, honey and a pinch of sea salt, and black pepper to make the orange vinaigrette
  • Pour the vinaigrette over the salad and toss gently to evenly coat all the ingredients.
  • Refrigerate the salad for at least 30 minutes before serving for the flavours to meld together and enhance the taste.
