In a medium-sized saucepan, combine diced pears, honey, apple cider vinegar, chopped red onion, grated ginger, mustard seeds, red pepper flakes, ground cinnamon, ground cloves, and a pinch of salt.
Bring the mixture to a gentle boil over medium heat, stirring occasionally to ensure the honey dissolves evenly.
Once the mixture is boiling, reduce the heat to low and let it simmer for about 30-40 minutes, or until the chutney thickens and the pears become tender. Stir occasionally.
Taste the chutney and adjust the seasoning, adding more salt or red pepper flakes if desired.
Remove the chutney from heat and let it cool to room temperature. As it cools, the chutney will continue to thicken.
Transfer the Spicy Pear Honey Chutney to sterilized jars and store them in the refrigerator.
